Rinse 100g soya mince thoroughly in cold water. Bring 300ml water or stock to the boil in a large saucepan on the medium hob ring over a high heat, add the soya mince. Stir, cover with a lid, reduce the heat to low and simmer for 10 minutes until most of the water has been absorbed. Now the mince can be added to any recipe in place of meat mince – though we recommend adding some flavourings or stock to the water during the boiling process. You can also add straight to a bolognese or similar as dry and flavours will be absorbed in the pot instead.
